Goals to work towards in 2018

Goals to work towards in 2018



Normally I don’t really do New Years Resolutions. Honestly I dont think I ever have. But I thought it would be a nice change to make some goals to work towards for the new year. So here is a list of things I would like to change or work towards in 2018.
  1. No soda. I’m not a huge soda drinker. The only time I really have soda is when we go out to eat or sometimes when I’m at work. We normally don’t buy soda for the house just to have unless its for mix drinks and I do like my rum and cokes at times. So for the occasional drink I think its fine. Like when I’m out of wine, and had a long day or week at work.
  2. No red meat. I would like to go completely no meat but we will see. Baby steps.
  3. Workout. Accordingly my Fitbit I already surpass the daily 10,000 steps. I do like 13,000-14,000 steps in a day. So Minimum of 3 days. Yoga. Squats. Something else.
  4. No unneeded spending. Enough said.
  5. Read 18 books for 2018.
  6. Downsize my closet. I still have to many clothes, shoes, jackets, etc. Help.
  7. GROW MY HAIR OUT. NO MORE PIXIE. I’m already half way where I want to be.
  8. Paint, create, art more.
  9. More sales in my Etsy shop. I sold 2 items this year.
  10. Blog more often.
  11. Finish my classes on Udemy. I have 6 classes that I paid for (paid no more the $12 for a class). Not taking any more till they are all done. 5 of 6 done so far.
  12. Finish Lost. Ive been watching it on and off for about 2 years now. Oops.
  13. Practice Mindfulness more.
  14. Banish the psoriasis from both shins. 3-5 years overstayed welcome. It has been lighten up slowly more and more but BE GONE!
  15. Shrink the products that are taking over the hallway closet. Face, hair, body products. I have too many.
  16. Drink more water. I fill up my 16oz bottle 1-2 times a day. So I’m half way there.
  17. Read tarot daily.
  18. Not to be so critical. On myself and others. I’m a Virgo. I’m sorry. I just cant stop sometimes.
So far that is my list. Nothing that I cant do. Just need self discipline to accomplish them. What are some of your goals you would like to work towards.

10 Super Easy Freezer Dump Meals for The Slow Cooker



I LOVE my slow cooker. They are so easy to use.  I actually have two, well one is a roaster oven that can be used as slow cooker and other things. I have been making all of our meals in the slow cooker, since my gas oven igniter died on us about six months ago. Our stove top and broil still works great. So as right now I don't see the need to spend money on a part when we can use other means of cooking meals.  I have even baked cakes and brownies in my roaster oven and they turned out perfect. Just shaped oddly like the roaster oven, but no one could tell the difference.
So what are Freezer Dump Meals? They are meals that have been prepared beforehand and freezed. Then dumped in the slow cooker the day of to cook. Very easy! These recipes work well too if they are made the day of, you don't have to prepare them and freeze them before hand. But sometime is nice to have something together already  and all you have to do is put it in the slow cooker and leave it.
Here are some easy meals that I thought I would share, that you can make in the slow cooker. You don't need to get every item that is listed. You can still make these recipes if you don't have an item. Or substitute.  Use your own judgement.

*Times can vary depending on your slow cooker. I know my roaster oven tends to run hotter than my slow cooker, and I have overcooked a few things in it. *

Honey Sesame Chicken 

1/2 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 tablespoons vegetable oil
1/2 onion, diced
2 tablespoons of minced garlic
1/4 teaspoon crushed red pepper flakes
2 pounds boneless, skinless chicken thighs 
Salt & Pepper to taste 
Dump all the ingredients into the bag. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

Slow Cooker Peach Chicken 

3 tablespoons minced garlic
1 tablespoons soy sauce
1 cup peach jam
1 lb Boneless, skinless chicken breasts
Dump all the ingredients into the bag, and freeze. Dump the contents of the bag into the crockpot and cook on low for 4 hours. Shred chicken and continue cooking.
Salsa Verde Crockpot Chicken Recipe
1 can black beans - drained
1 can corn - drained
16 oz jar salsa verde
2 lbs boneless skinless chicken breast
8 oz cream cheese - **not needed til the day of cooking
Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours. Add cream cheese and let it cook for the remaining 1/2 hour.

Crockpot Cranberry Chicken

1/2 small onion
1 can whole cranberry sauce
2 tablespoons minced garlic
2 tablespoons honey
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
2 lbs boneless skinless chicken breasts
salt & pepper to taste
Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

Honey Dijon Chicken

1/4 cup honey
2 tablespoons dijon mustard
1/2 teaspoon ground thyme
2 lbs boneless skinless chicken breasts
Salt & Pepper to taste
Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

Chili Mac Casserole (make this recipe x 2)

16 oz pasta, cooked and drained
1 can chili beans
1 packet chili seasoning
1 onion, chopped
1 can rotel or stewed tomatoes
1 can tomato sauce
1 cup shredded cheddar

Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

 

BBQ Chicken and Veggies -Makes 2 recipes 

2 bell peppers, chopped
1 zucchini, chopped
3 onions chopped
6 red potatoes, chopped
4 garlic cloves, chopped
4 chicken breasts
1 15 oz. can of tomato sauce
1 tbsp. brown sugar
1 bottle of BBQ sauce
Split ingredients into two bags and freeze. Cook in slow cooker on high for 4 hours or low for 8 hours

Teriyaki Chicken- recipe  makes 2

3 boneless chicken breasts
1 cup teriyaki sauce
1 cup water
2/3 cup brown sugar
3 cloves of garlic
Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

Chicken Taco Soup- recipe makes  4

2 Frozen Chicken Breasts
1 can Black Beans
1 can Corn
1 can Rotel
1 onion, chopped
1 packet taco seasoning
1 packet ranch dip mix
Dump all the ingredients into the freezer bag and freeze. Cook in slow cooker on low 8 hours.

White Chicken Chili- recipe makes  2

2 frozen chicken breasts
1 onion, diced
3 cloves garlic, minced
3 cans great northern beans
1 - 7 oz can green chilies
1 can corn
3 cups chicken broth
1 tsp chili powder
1 packet ranch seasoning

Dump all the ingredients into the freezer bag and freeze. Dump the contents of the bag into the crockpot and cook on low 6-8 hours or high for 4-6 hours.

Tracking your cycle is important to do, long before I got a iPod touch in 2009 I use to track it by calendar. But once I got the iPod touch I searched for a app that would help me track  my cycle. Using a app has made it easier and more convenient over the years for me. I have tried a couple of apps over the years and I think I found the one.
The app is called Clue. I love this app. You can track your flow, fertility,  cravings, pain, mood, sleep, sex, energy, hair, skin and so much more.  It even tells you when PMS will be. Which I find this to really helpful and so does my husband. You can setup reminders to notify you when your fertility window is approaching, PMS, flow and birth control. The app is for apple and also for android.
I have now been using this app for the past 3-5 years now and it has not failed me. When it predicts the day it will start, it starts. I have reminders to remind me to log every few days. I even have it in my widget section on my iPhone so I can quickly add to it.
